Carbonara celebrates the dish that established Lorenzo Pazzaglia as Chef, as well as the beauty of sitting down at the table all together, a celebration of Italianness. A sparkling opening, with three varieties of pepper, replicates the cheerfulness and excitement that precedes sitting at the table, with the addition of light smoky hints. Soft, smooth notes such as coconut, davana, and Rhum reproduce the creaminess of this dish, but also give that feeling of well-being that comes with conversing in pleasant company. Amber, woody, and slightly vanilla notes at the base make it a wonderful moment, indelible in our memory.
